Wild game and mushroom are joined by ripe, rich fruit and powerfully built tannins. A crisp, crunchy undercurrent of high-toned red fruit brings brightness, and the finish carries oaky spice. The wine comes from Rudy's Vineyard in Dry Creek Valley and contains fifteen and four-tenths percent alcohol. The fruit is identified as old-vine Zinfandel from Sonoma County.

Light, bright and crisp, the white wine shows caramel, vanilla brioche and a touch of salty oak. Citrus freshness appears with hints of flint and matchstick. The Chardonnay is sourced from both Red Hen Vineyard and from Linda Vista Vineyard in Napa's Oak Knoll District. It comes from Napa, California and carries thirteen percent alcohol.

Deep ruby red shows orange highlights. Rose, violet, truffle and tobacco accompany a dry, harmonious profile that is full and velvety. Nebbiolo grows on calcareous clay with southeast exposure. The grapes are hand-picked. Vinification takes eighteen to twenty-four days, and maturation takes place for twenty-four months in large barrels. The vines stand approximately 250 to 280 metres above sea level.

Dark purple and black colour accompanies black fruit, a slight herbal lift, anise, dark cherry and dried spice. The blend contains Shiraz and Cabernet Sauvignon from old vines in Ebenezer, at the northern end of the Barossa Valley. It ferments in open vessels before sixteen months in new French and American oak. The wine is bottled unfiltered after maturation on lees.

Deep ruby colour accompanies cherry, blackberry, wet earth, mocha, anise and blueberry. Ripe, fine tannins and balanced acidity sit within a rich, velvety texture and an extremely long finish. Dark cherry, plum and spice also appear with firm structure. This Pinot Noir comes from Oregon's Willamette Valley and represents a selection of individual cellar lots.
Rhys Alesia 2018 Anderson Valley Chardonnay
American White
Gold colour accompanies honeysuckle, white blossom and honeyed orchard fruit, together with apple and white flowers. The medium-bodied wine has finesse, tangy acidity, chalky minerality, lemon curd and crushed citrus, with a long mineral finish. Chardonnay fruit comes from Anderson Valley in California. Bosc pear, red apple, stone, honeycomb and baker's yeast add further detail.
Monte Zovo 2018 Amarone della Valpolicella DOCG

Deep crimson in colour, the wine also shows black cherry alongside ripe black plum, dusty earth and dried herbs. Fig, blackcurrant, spiced chocolate and vanilla also appear, together with integrated tannins and a lasting finish. The wine is made from Corvina, Rondinella and Molinara in Veneto. Maturation takes place for twenty-four months in French oak.

Cherry and red fruit appear with spice in this Tenerife red, which has a long, refined finish. The blend divides equally between Tintilla and Baboso Negro from ungrafted vines. After a cool maceration, each variety ferments separately with stems in open wooden vats. The two wines then mature together for one year in a foudre before bottling.

Dried red cherry, mint, spice, tobacco, dried leaves and worn leather shape this wine, made entirely from Nebbiolo. Fruit comes from young vines in Barolo- and Barbaresco-designated vineyards. Peppery warmth accompanies its fruit and chocolate details. This Rhône red comes from Châteauneuf-du-Pape in the southern Rhône, with a full, concentrated body and a supple texture.
Petterino 2018 Gattinara Riserva

Floral notes, iron, anise and berries characterize this aromatic Nebbiolo. Grapes are harvested by hand, followed by about fifteen days of fermentation. The wine spends three years in 25-hectolitre botti and at least six months in stainless steel for natural clarification before bottling. Dense and full-bodied, with detail and nuance in the deep flavours. The texture is round, with firm tannins, length and balance. Shiraz comes from the Borrett family's 20 Rows block in Langhorne Creek. The smaller crop was harvested by hand at the vineyard on 13 March. Those vineyard and harvest details accompany the wine's deep flavour and round texture.
