Made entirely from Cabernet Sauvignon, the fruit comes from the Tulum Valley in San Juan. Grapes are gently destemmed and crushed before stainless-steel fermentation near twenty-five degrees Celsius, a long maceration and natural malolactic fermentation. Cold stabilization and light filtration precede bottling.
Boschendal 2018 The Pavillion Shiraz Cabernet Sauvignon
Dark red fruit and toasted vanilla accompany a soft, balanced palate with a juicy dark-berry centre. Shiraz and Cabernet Sauvignon form the blend from South Africa’s Western Cape. The grapes are hand picked and sorted before the varieties ferment separately in stainless steel for six to fifteen days. Thirty percent matures in French oak hogsheads, while the remainder stays unoaked.
Thalia 2024 Cabernet Sauvignon Agiorgitiko Peloponnese
Red berries and vanilla accompany a vibrant palate, silky tannins and depth. Agiorgitiko and Cabernet Sauvignon form the blend from the Peloponnese. Each variety receives one week of skin contact and completes malolactic fermentation before the final blend is assembled. The grapes are harvested by hand from September into October, and the finished wine carries twelve percent alcohol.

Deep ruby-red colour frames ripe fruit and a firm structure. Made entirely from Cabernet Sauvignon in Chile’s Maule Valley, the wine is dry and reaches 13.5 percent alcohol. Fermentation takes place in stainless steel, and maturation lasts four to six months in oak. The profile balances fruit with wood while retaining mature, soft and rounded tannins.

Intense ruby-red colour in the glass shows light garnet reflections. An intense fragrance includes raspberry, blackberry and ripe red fruit, with delicate vanilla also present. The palate is dry, well-balanced and full-bodied, supported by sweet, delicate tannins. Merlot and Cabernet Sauvignon form the blend. The wine comes from Colli Orientali del Friuli in northeastern Italy.
