Grapes are harvested by hand, and fermentation takes place in temperature-controlled stainless steel.

Made entirely from Nerello Mascalese, the wine comes from Sicily's volcanic soils and carries the Terre Siciliane IGT designation. It contains thirteen percent alcohol and is closed with a screw cap.

Redcurrant, cherry, floral notes and gentle spice define the profile. The palate is medium-bodied and balanced, with delicate tannins and freshness. Eighty percent Nerello Mascalese and twenty percent Nerello Cappuccio come from volcanic sandy soils between 650 and 750 metres. After a forty-eight-hour cold maceration, fermentation takes place in stainless steel, with five to six months in tonneaux.

Delicate fruit, herbs and woodland tones define the profile, and maturation lasts one year in chestnut barrels. The wine carries Etna DOC status and thirteen percent alcohol. The vineyards sit on Etna, where southern warmth meets mist, pronounced temperature shifts and frequent rain.

Pale red in colour, with tart cranberry and cherry fruit. The palate is supple, light and juicy, with little tannin and a slightly bitter almond finish. Nerello Mascalese forms most of the blend, with a small share of Nerello Cappuccio. The vines grow on volcanic soils between Castiglione di Sicilia and Randazzo, and the wine matures in oak for about one year.

The wine has fourteen percent alcohol.
Nicosia 2019 Lenza di Munti Etna Rosso

Brilliant ruby in colour, the wine combines eighty-five percent Nerello Mascalese with fifteen percent Nerello Cappuccio. Floral notes and red fruit appear in a lively, smooth profile with strong minerality and an intense fruity finish. The grapes come from volcanic soils on lava terraces at an average elevation of 720 metres. Fermentation lasts ten to fifteen days in stainless steel, and ageing includes four months before bottling plus five to six months in bottle.

Organically grown Nerello Mascalese comes from old bush vines on high, terraced vineyards on Etna's northern face. Half the blend is made in a traditional palmento, thirty percent in Georgian qvevri and twenty percent in a large used oak botte. Indigenous yeasts conduct spontaneous fermentation; the wine rests twelve months on fine lees and is bottled without fining or filtration.

Ripe wild berries, cherry and pomegranate sit with black pepper, sweet tobacco and a smoky volcanic-stone note. The palate has silky tannins, lively acidity, freshness and persistence. Nerello Mascalese is destemmed and fermented on skins in stainless steel for twelve to fifteen days. Maturation lasts six months in stainless steel and twelve months in 20-hectolitre oak barrels.

Currant, blackberry and plum accompany spice and coffee. The palate is full-bodied and balanced, with fine tannins, freshness and persistence. Nerello Mascalese grows on volcanic soil along Etna's south-eastern slope. Maceration and fermentation last ten to twelve days at 25–27°C. The wine is separated from the skins without pressing and matures for ten to twelve months in 50-hectolitre French oak.

Seventy percent of the grapes are destemmed by hand, with the rest retained as whole bunches. Fermentation is spontaneous, and the wine remains on fine lees in large used oak casks.

Nerello Mascalese grows on volcanic soils, with vines averaging sixty years of age. The grapes are harvested by hand, destemmed and gently pressed. Spontaneous fermentation lasts sixty days in epoxy tanks with indigenous yeasts. Maturation also takes place in epoxy. The wine is neither fined nor given added sulphur dioxide, and filtration uses five-micron cartridges. The vineyard is farmed organically.

Nerello Mascalese grows between six hundred and seven hundred metres on Etna's north-eastern slope. Spontaneous fermentation takes place in cement with thirty days of maceration, and the wine matures for eighteen months in cement.

Day-to-night temperature changes and volcanic soil form part of the growing conditions.

The vineyard is farmed biodynamically by hand and planted mainly to Nerello Mascalese.

Alcohol is 14.5 percent. The wine is lighter-bodied and textural.
