Joseph Phelps 2021 Napa Valley Cabernet Sauvignon
American Red
Ripe currant, tobacco, leather, pencil shavings and dark chocolate are joined by dark plum, blackberry and savoury spice. The full-bodied wine is rich, fleshy, dense and layered, with acid structure and depth. The blend is ninety-two percent Cabernet Sauvignon, four percent Petit Verdot, two percent Cabernet Franc, one percent Merlot and one percent Malbec. It matured for sixteen months in new and used French and American oak barrels.

French Sparkling
Pinot Noir grows in clay-rich soils, with ninety-five percent vinified as white wine from Verzy and five percent added as still red wine from Verzenay. Dosage is 0.8 grams per litre. Grapefruit, red cherry, redcurrant and spice accompany an aromatic, incisive character. The wine is medium-to-full-bodied, with tension, minerality, good cut and a saline finish.

French Sparkling
Chardonnay from six grands crus in the Côte des Blancs is gently pressed, settled twice and fermented slowly in cool stainless steel. Malolactic fermentation, secondary fermentation and cellar ageing are part of the production. Silvery tints and delicate bubbles accompany chalk, flint, white flowers, yellow cherry, dried nuts, citrus and exotic fruit. The texture is delicate and almost crunchy, with lemon and orange zest, toast, and a long saline finish.
Foppiano 2019 Russian River Valley Estate Pinot Noir
American Red
Cranberry, cherry and wood spice accompany a tar-like detail. Smooth tannins lead into balanced density and a soft finish. The Pinot Noir was harvested at lower sugar and fermented with Assmanshausen yeast. Maturation lasted sixteen months in tight-grain French oak, thirty-five percent new. Fruit came from the estate’s cooler land near the Russian River, south of Healdsburg.
Domaine Jamet 2019 Syrah Collines Rhodaniennes
French Red
Syrah grows on micaschist and granite in parcels on the higher slopes around Ampuis and Condrieu. The grapes are destemmed and macerate for about fifteen days. Maturation lasts twelve months in oak barrels that have held five or six earlier vintages. This French red wine is made entirely from Syrah within the Collines Rhodaniennes indication.
Poderi Colla 2024 Pian Balbo Dolcetto d’Alba
Italian Red
Purple-red colour has violet edges, with cherry, plum, almond and spice. Ripe fruit, fine tannins and vinosity shape the palate. Dolcetto comes from a hilltop vineyard with established plantings. After manual harvest, the grapes are destemmed and crushed. Skin maceration lasts five to seven days, followed by full malolactic fermentation and maturation in stainless steel before bottling.
Justin 2020 Paso Robles Cabernet Sauvignon
American Red
Deep ruby-purple colour accompanies black cherry, cassis, tobacco leaf, baking spice, oak, leather, camphor and purple flowers. The dry, nearly full-bodied palate includes black cherry, blackcurrant, red berries, vanilla and cinnamon. Fermentation takes place in open- and closed-top stainless-steel tanks with twice-daily pumpovers. The Cabernet Sauvignon matures for thirteen months in American oak, one quarter new.
Daydreamer 2023 Marcus Ansems Chardonnay
Canadian White
Chardonnay grows on the Naramata Bench in exposed granite high above Okanagan Lake, where the plot has particularly little organic matter. The grapes are destemmed before pressing into barrels, thirty percent new. The family-run Canadian winery farms sustainably in British Columbia’s Okanagan Valley. Its wines are crafted by a holder of the Master of Wine qualification.
Primitivo Collantes 2021 Socaire Palomino Fino
Spanish White
Golden straw colour accompanies slate, flowers, ripe white fruit and lactic notes. The palate is broad and fresh, with mint and a long finish. Palomino Fino grows in albariza soils near Chiclana de la Frontera. The dry, unfortified white matures for about twenty-four months in old Fino barrels that remain topped, allowing a light influence from flor.
Forjas del Salnés 2023 Leirana Albariño
Spanish White
White flowers, fruit, herbs and fine-lees notes accompany an elegant, clean expression. The medium-bodied palate has ripeness, freshness and balance, with a bitter, salty twist at the finish. Albariño ferments and matures for six months in stainless steel and oak foudres, with eighty percent of the wine held in foudre. The fruit comes from Rías Baixas in Galicia.
Villota 2021 Selvanevada Rioja Blanco
Spanish White
Pale gold colour accompanies pineapple, lemon, floral notes, spice and vanilla. The blend has a creamy, rich texture, with minerality, dried apricot and hazelnut. Viura, Garnacha Blanca, Malvasia and Tempranillo Blanco form the cuvée. Maturation lasts six months in French oak on the lees. The fruit comes from Rioja Alavesa within the Rioja denomination in Spain.
Weingut Beurer 2023 Schilfsandstein Riesling
German White
Clear straw yellow colour accompanies ripe pear, peach, vegetal notes and dill. The palate has gentle acidity, body and a medium-length saline mineral finish. Riesling grows on skeletal, lime-free sandstone in southeast-facing Stettener Häder parcels. The grapes are selectively hand harvested, then pressed and spontaneously fermented. Fermentation and maturation take place in stainless steel before gentle filtration and light sulphuring.
Domaine Naudin-Ferrand 2024 Gamay de Bully
French Red
Fresh red fruit and wild pepper accompany pleasant acidity, softened tannins and a light alcoholic profile. The grapes are harvested by hand into small cases, refrigerated, carefully sorted and placed whole into concrete. Fermentation proceeds without added sulphites and with minimal extraction. Early pressing precedes full malolactic fermentation on the lees, followed by early bottling.
Riecine 2021 Chianti Classico
Italian Red
Pale purple colour accompanies red and purple florals, red cherry, plum, raspberry, pomegranate, orange peel, herbs, liquorice and sweet spice. The palate is agile and lightly textured, with complex minerality, powdery tannins and lively acidity. Sangiovese comes from high-altitude vineyards in Gaiole. It ferments spontaneously with indigenous yeast in concrete, then matures in unlined concrete and large untoasted oak.
Siduri 2021 Russian River Valley Pinot Noir
American Red
Red plum, black cherry and violet appear in the aromatics. Mulberry, blood orange, wet stone and cola are present on the palate. Fruit comes from Parsons’, Bloomfield, Dutton-Perry Ranch and Barbieri vineyards. Some sections ferment as whole clusters. Maturation lasts ten months in French oak, thirty percent new. Freshness, acidity and soft tannins are also present.
Gérard Bertrand 2024 Gris Blanc Rosé 1.5 L
French Rosé
Very pale pink colour shows grey and white highlights. Red-fruit aromas accompany a slight spritz, freshness and fruit. The finish is elegant, fresh and mineral. Grenache Gris and Grenache Noir form the blend. The vineyards lie mainly around Tautavel in Roussillon. The wine rests on fine lees for several weeks before bottling. Low rainfall and abundant sunshine characterize the vineyard climate.
Meerlust 2024 Chardonnay
South African White
Bright pale yellow colour has a green hue. Pear, lemon zest, yellow apple and toasted almond appear in the delicate aroma. The palate is structured and linear, with focused stone fruit, balanced acidity, citrus and minerality. Fruit comes from weathered granite and rocky greywacke with shale. Fermentation uses selected yeast or proceeds spontaneously in barrels and concrete, followed by maturation and light fining.
Domaine Jean Bourdy 2020 Côtes du Jura Blanc Chardonnay
French White
Golden colour accompanies fruit, sherry-like notes, yeast, Indian spice and umami. Herbs add an incense-like detail. Nuttiness, ripe pear, baked apple, briny minerality and lively acidity are also present. Made entirely from Chardonnay, the dry white comes from clay-limestone soils and grey marl. Biodynamic vineyard work is certified by Demeter. It may be opened several hours before service.
Emilio Vada 2024 Cua Rusa Langhe Nebbiolo
Italian Red
Live ruby colour has light violet reflections, with raspberry, rose and violet. The palate is full, harmonious and slightly dry, with a lingering aftertaste. Nebbiolo grows in calcareous, clay-rich soil. Fermentation takes place in temperature-controlled stainless steel with daily pumpovers. Malolactic fermentation follows, and the wine remains in stainless steel before bottling in April or May.
Tenuta di Saragano 2018 Montefalco Rosso Riserva
Italian Red
Sangiovese forms sixty percent of the blend, with twenty percent each Merlot and Sagrantino. Ruby colour tends toward garnet, with black cherry, ripe wild berries, cedar and tobacco. The profile is soft and harmonious, with refined tannins. The twenty-five-year-old vineyard lies at 500 metres on sandstone and clay. Maturation includes French barriques, large barrels and a year in bottle in an underground cave.
Mandirola 1913 2021 Tantèi Timorasso Riserva
Italian White
Jasmine, gardenia, honeysuckle and orange blossom accompany fresh and baked heirloom apples and pears. The profile is lush, with honeycomb, stone fruit, bitter orange marmalade, crunchy acidity and stony minerality. Timorasso comes from a vineyard more than ninety years old. Fermentation starts in concrete, finishes in wood, then returns to concrete before ageing on lees and in bottle.

Cassis, soaked black cherry, liquorice and ink accompany spice, black fruit, graphite, rose petal and black olive. Smoke is also present. The wine has fine, extended tannins. Syrah grows on schist and is harvested by hand. Vinification uses partial destemming, indigenous yeast and about fifteen days of maceration. Maturation lasts twenty-two months in older oak barrels before bottling.
Mark Haisma 2023 Bourgogne Pinot Noir
French Red
Airy, fresh notes include a hint of pepper. The profile is direct and wide, with depth and powdery tannin. Delicate, vivid fruit has good intensity without heavy extraction or density. Pinot Noir comes from the communes of Gevrey-Chambertin and Brochon. The fruit is harvested by hand, fermentation uses indigenous yeast, and maturation takes place in oak barrels.

French White
Bright gold colour accompanies acacia, linden, citrus and mineral notes. The wine is dynamic, with fine acidity and balance. Chenin grows on schist and is picked early; the wine is dry, direct and saline. Vinification takes place in tanks, followed by maturation on fine lees without oxygen. Pounded apple, quince, acidity and salinity are also present.
Cantina Terlano 2022 Monticol Pinot Nero Riserva
Italian Red
Intense ruby red colour accompanies wild strawberry, raspberry and cherry, with restrained spice and flint. The wine is balanced, with mineral elegance and a long finish. Pinot Noir grows at 450 to 650 metres on sandy porphyric gravel. Fermentation takes place in stainless steel, followed by twelve months in large wooden barrels and barriques, with blending three months before bottling.
Armand Heitz 2021 Bourgogne Rouge
French Red
Vivid violet colour accompanies red and black fruit. The profile is delicate, with orange zest on the finish. Wild strawberry, raspberry, wax, crushed stone and light smoke are also present, together with fine, light tannins and a juicy core. Half the fruit ferments as whole clusters with native yeast, and maturation lasts eight months. The vines grow on silty clay over marl.
Château Coufran 2009 Haut-Médoc
French Red
Deep crimson colour accompanies blueberry, blackcurrant and fine woody hints. The palate is full and ample, with concentrated, fleshy substance and tender tannins. Merlot forms eighty-five percent of the customary blend, joined by fifteen percent Cabernet Sauvignon. The vineyard lies on gravel and clay in the Haut-Médoc appellation, with vines averaging about fifty years of age across a single seventy-six-hectare block.
Château de Carles 2020 Haut-Carles Fronsac
French Red
Fresh blackcurrant, raspberry, cherry, blueberry, violet and cornflower accompany star anise, nutmeg and toast. The wine has freshness, concentration, energy and fine tannins, with a long aftertaste. A fresh-sap character and a slight chewiness are also present in the profile. The vineyard is farmed under a sustainable approach in the Fronsac appellation, within France's Bordeaux region.
Domaine Fumey Chatelain 2022 Brouillé-Ménage Ploussard

Old Ploussard vines grow on marl soils around Montigny-lès-Arsures and Arbois. Maturation takes place for ten months in large oak and stainless steel. The release combines a rich, dense profile with freshness, easy drinking and a confectionery note. The estate works with Jura red varieties including Ploussard, Trousseau and Pinot Noir across marl and limestone soils.
Domaine Naudin-Ferrand 2023 Le Clou 34 Aligoté
French White
Aligoté comes from five parcels planted between nineteen thirty-four and nineteen fifty-three on shallow limestone soils. Most fruit comes from Le Clou, with La Croix, Egoulotte and Les Tilles also included. Fermentation takes place in stainless-steel and enamelled tanks, with seven months on fine lees without bâtonnage. The production record also includes bentonite fining, light filtration, gravity bottling and a small sulphur addition.
