Citrus and fresh fruit appear with candied apricot and green almond. Honey and acacia blossom are also present, together with length, freshness and vivacity. The blend is eighty-four percent Semillon, twelve percent Sauvignon Blanc and four percent Muscadelle. Individual lots were pressed separately, followed by cold settling and barrel fermentation. Maturation lasted twenty-four months in barrel. Alcohol is listed at 13.5 percent.

Medium-intensity yellow colour carries green tinges. Pineapple, vanilla, sweet spice, orange peel and peach appear with concentration, sweetness and balancing acidity. The blend is ninety-two percent Semillon, five percent Sauvignon Blanc and three percent Muscadelle. Harvest ran from mid-September to early November in five selective passes. Fermentation took place in barrels, and maturation lasted twenty-six months in new oak.

Amber colour accompanies an oxidative profile reminiscent of Amontillado, with olive, dried apricot, brine, toffee and walnut. The wine has welcoming sweetness and freshness, while the finish is almost malty and long. Made from Chenin Blanc grapes, this sweet white comes from Coteaux du Layon in the Loire Valley. Alcohol is listed at twelve-and-a-half percent.

Crisp white peach, orange oil, spring blossom and freshly baked bread appear in the profile. The Chardonnay is medium- to full-bodied, bright and layered, with lively, precise character and chalky extract. Clementine and ginger are also present, while the wine is vibrant and concentrated. This white Burgundy comes from Puligny-Montrachet in the Côte de Beaune.

Chardonnay grows on limestone, marl and clay soils with east and southeast exposures. Brilliant pale-yellow colour accompanies white and yellow fruit with light woody notes. The palate is round and full, with vanilla and toast and a slightly acidic finish. The wine spends fourteen months in French oak barrels, less than one third new, with regular stirring. The vineyards are farmed organically.

French White
Chardonnay grows on Kimmeridgian marl with a south to southwest exposure. The lower slope has deeper brown soil, while the upper slope is whiter and more clay-rich. Fermentation with indigenous yeasts takes place partly in stainless steel and partly in barrel. Peach, apricot and hawthorn appear in a powerful, mineral profile with reserve and austerity. Malolactic fermentation is completed before blending.

Pale, bright yellow-green colour accompanies aromas of lime, apple, powdered stone, quinine, mint and white pepper. Citrus fruit, spice, white flowers and fresh herbs appear in a fresh, elegant profile that is precise, brisk and seamless. The Chardonnay was made entirely in stainless steel. The long finish has mineral and white-flower notes, with salinity, penetration and concentration also present.

Chardonnay comes from the domaine's oldest vineyard and is aged equally in stainless steel and old barrels. Bright pale-yellow colour accompanies peachy fruit salad. Petrol, citrus, white flower, pear and sea-shore elements are present. The wine is plush and very ripe, with a creamy texture and a faint phenolic quality. Mineral complexity and a strikingly long finish are also present.

Chardonnay comes from a Chablis grand cru climat situated between Valmur and Blanchots. The site once had enclosing walls. Pale golden colour carries green glimmers. Mineral and honeyed notes join citrus and white stone fruit on a delicate nose. The palate is powerful, dense and fleshy with lively acidity. A mineral and saline finish is also present.

Production for this old-vine Chablis grand cru totalled twelve hundred bottles.

This Gewurztraminer includes fruit from Osterberg and Hunawihr. Honey, rose petal, peony, sweet pea, bacon fat and cinnamon are present. The palate is rich and firm, with a cool chalky impression. Fifteen grams of residual sugar appear alongside unusually high acidity and palpable extract. Refined and elegant in character, the wine has persistent juiciness, florality and subtle spice.

Palomino Fino comes from the El Notario parcel in Macharnudo. This unfortified white wine ages under a veil of flor in Sherry casks. Pale golden in colour, it combines floral notes, citrus fruit, bakery aromas and nuts. The profile is fresh, complex and mineral, with a long finish. Alcohol is fourteen percent, and production totals two thousand bottles.

Chardonnay grows on the Naramata Bench in exposed granite high above Okanagan Lake, where the plot has particularly little organic matter. The grapes are destemmed before pressing into barrels, thirty percent new. The family-run Canadian winery farms sustainably in British Columbia’s Okanagan Valley. Its wines are crafted by a holder of the Master of Wine qualification.

Golden straw colour accompanies slate, flowers, ripe white fruit and lactic notes. The palate is broad and fresh, with mint and a long finish. Palomino Fino grows in albariza soils near Chiclana de la Frontera. The dry, unfortified white matures for about twenty-four months in old Fino barrels that remain topped, allowing a light influence from flor.
Forjas del Salnés 2023 Leirana Albariño
Spanish White
White flowers, fruit, herbs and fine-lees notes accompany an elegant, clean expression. The medium-bodied palate has ripeness, freshness and balance, with a bitter, salty twist at the finish. Albariño ferments and matures for six months in stainless steel and oak foudres, with eighty percent of the wine held in foudre. The fruit comes from Rías Baixas in Galicia.
Villota 2021 Selvanevada Rioja Blanco
Spanish White
Pale gold colour accompanies pineapple, lemon, floral notes, spice and vanilla. The blend has a creamy, rich texture, with minerality, dried apricot and hazelnut. Viura, Garnacha Blanca, Malvasia and Tempranillo Blanco form the cuvée. Maturation lasts six months in French oak on the lees. The fruit comes from Rioja Alavesa within the Rioja denomination in Spain.
Weingut Beurer 2023 Schilfsandstein Riesling
German White
Clear straw yellow colour accompanies ripe pear, peach, vegetal notes and dill. The palate has gentle acidity, body and a medium-length saline mineral finish. Riesling grows on skeletal, lime-free sandstone in southeast-facing Stettener Häder parcels. The grapes are selectively hand harvested, then pressed and spontaneously fermented. Fermentation and maturation take place in stainless steel before gentle filtration and light sulphuring.
Meerlust 2024 Chardonnay
South African White
Bright pale yellow colour has a green hue. Pear, lemon zest, yellow apple and toasted almond appear in the delicate aroma. The palate is structured and linear, with focused stone fruit, balanced acidity, citrus and minerality. Fruit comes from weathered granite and rocky greywacke with shale. Fermentation uses selected yeast or proceeds spontaneously in barrels and concrete, followed by maturation and light fining.

Golden colour accompanies fruit, sherry-like notes, yeast, Indian spice and umami. Herbs add an incense-like detail. Nuttiness, ripe pear, baked apple, briny minerality and lively acidity are also present. Made entirely from Chardonnay, the dry white comes from clay-limestone soils and grey marl. Biodynamic vineyard work is certified by Demeter. It may be opened several hours before service.
Veronica Ortega 2022 La Llorona Godello

Citrus and apricot accompany toasted sunflower seeds and light chamomile. The profile is complex and mineral, with length. Godello comes from a thirty-five-year-old vineyard on sandy soils in Pieros at about 500 metres. The grapes are harvested by hand. Destemmed fruit ferments and matures for nine months in 225-, 500- and 600-litre French oak barrels.
Mandirola 1913 2021 Tantèi Timorasso Riserva
Italian White
Jasmine, gardenia, honeysuckle and orange blossom accompany fresh and baked heirloom apples and pears. The profile is lush, with honeycomb, stone fruit, bitter orange marmalade, crunchy acidity and stony minerality. Timorasso comes from a vineyard more than ninety years old. Fermentation starts in concrete, finishes in wood, then returns to concrete before ageing on lees and in bottle.

French White
Bright gold colour accompanies acacia, linden, citrus and mineral notes. The wine is dynamic, with fine acidity and balance. Chenin grows on schist and is picked early; the wine is dry, direct and saline. Vinification takes place in tanks, followed by maturation on fine lees without oxygen. Pounded apple, quince, acidity and salinity are also present.
Domaine Naudin-Ferrand 2023 Le Clou 34 Aligoté
French White
Aligoté comes from five parcels planted between nineteen thirty-four and nineteen fifty-three on shallow limestone soils. Most fruit comes from Le Clou, with La Croix, Egoulotte and Les Tilles also included. Fermentation takes place in stainless-steel and enamelled tanks, with seven months on fine lees without bâtonnage. The production record also includes bentonite fining, light filtration, gravity bottling and a small sulphur addition.

French White
Almond, citrus zest and toasted detail accompany an aromatic profile and an acid structure. The 1.6-hectare vineyard lies at Bergheim between Gruenspiel and Rotenberg on lacustrine clay. Muscat is planted alongside members of the Pinot family, and noble rot is part of the site record. The wine is soft and rich, with a tonic, refreshing character.

Melon de Bourgogne comes from sixty-year-old vines in a seventy-are parcel on granite and orthogneiss. Harvesting is manual. Pneumatic pressing without settling and indigenous-yeast fermentation are used. Maturation includes twelve months on lees in an underground tank and twelve months on fine lees in older Burgundy oak. Citrus, lemon, grapefruit, white flowers, dried fruit, almond and toast are present.

Bright light-gold colour accompanies a slight oak note, vanilla, sweet spices, ripe peach, apricot, sweet citrus and beeswax. The palate is dense and fresh, with intense stone fruit, bright acidity, stony detail and a long, persistent finish. Chenin Blanc comes from Savennières. The estate was already farmed organically and added biodynamic methods from this vintage onward.
Philippe Foreau 2017 Vouvray Clos Naudin Demi-Sec
French White
White-tea tannins, vivid tangerine acidity, honeyed apple and citrus cream appear with ginger and toasted macadamia. The finish is subtly toasty and long. Chenin Blanc is fermented naturally and aged in old barriques. Malolactic fermentation is blocked, and no chaptalisation is used. The off-dry style carries twelve-point-six percent alcohol and comes from Vouvray in the Loire Valley.
Domaine des Marnes Blanches 2023 Macération En Quatre Vis
French White
Dried fruit, candied citrus and floral notes accompany a textured, almost tannic palate, mineral freshness and a long, vibrant finish. The blend combines 80 percent Savagnin with 20 percent Chardonnay. Whole bunches macerate for twenty-one days, while fermentation begins naturally. Ageing takes place first in amphorae and then in foudres for a total of twenty-two months.
Javi Revert 2023 Micalet Blanco
Spanish White
Light yellow colour accompanies mineral chalk, white stone fruit, delicate flowers and green herbs. The blend combines Tortosí, Trepadell, Malvasia, Merseguera and Verdil from a 2.5-hectare vineyard at 730 metres. Sandy soil is rich in chalk. The wine is fresh, with volume, length and acidity. Harvesting takes place in two passes, and production totals 2,000 bottles.
