Organic

Nebbiolo comes from six vineyards in Barolo, Monforte d’Alba and Serralunga d’Alba. Fermentation takes place in temperature-controlled stainless steel with punch-downs and pump-overs. The wine matures for about two years in casks and French oak barriques, then one year in bottle. Dried leaves, bark and disturbed earth appear with violet, liquorice and spice. Elegance and freshness accompany finely shaped tannins and long saline persistence.

Ten Pinot Noir clones from the estate vineyard form the blend, which ages sixteen months in French oak, seventy percent new. Vanilla, warm cherry sauce and caramel appear with berry fruit and purple flowers. Chipped-slate minerality is accompanied by dried thyme and bay leaf. Red currant, raspberry and cherry are finely textured. Chocolate and savoury notes are present. The finish has sandalwood and thyme.

Deep red-cherry colour accompanies floral and fruit aromas with liquorice. The attack is balanced and lively, with powerful, ripe tannins and a long, intense fruit-and-aroma finish. Grenache makes up seventy-five percent of the blend, joined by fifteen percent Syrah and ten percent Mourvèdre. Most of the fruit comes from a small lieu-dit with sand, clay, limestone and rounded-stone soils.

Blackcurrant and blueberry accompany violet and sweet spice. The texture is velvety, with supple tannins, lively acidity and a long finish. Gamay comes from southeast-facing granite slopes in the Bellevue and Montillet parcels. Most clusters are retained whole, maceration lasts several weeks, and maturation takes place in foudre. The vineyard is farmed organically in Beaujolais.

Deep purple colour with ruby tinges accompanies preserved red fruit and toasty oak detail. The entry is soft, with ripe tannins, good volume and acidity. Fruit and a mineral character are also present, together with a long, fresh aftertaste. Grenache, Carignan, Syrah and Cabernet Sauvignon form the blend, with grapes grown organically and biodynamically in Priorat.

A Grenache and Mourvedre blend from Côtes Catalanes in Roussillon, this red is listed at 13.5 percent alcohol. The estate farms 9.5 hectares at Saint-Paul-de-Fenouillet, using certified organic and biodynamic viticulture. Dry farming, hand harvesting and no added sulphur form part of the domaine’s approach. Its total production is around 16,000 bottles a year.

Black fruit, blackberry, strawberry, redcurrant and white pepper accompany sweet spice in a rich Cabernet Franc. Tannins are tight yet velvety, with volume and delicacy. Grapes are harvested by hand from granite soils and fermented with native yeasts. The wine matures in old barrels and amphorae for fifteen months. The vineyards have been farmed organically since nineteen seventy-five and carry Demeter Biodynamic certification dating from nineteen ninety-eight.

Pinot Noir comes from purchased organically farmed fruit from a single parcel called La Ceverie, on clay and limestone soils. Whole clusters receive a fifteen-day maceration before the wine spends six months in 225-litre barrels. The red is bottled unfined and unfiltered, generally without added sulphur; up to fifteen milligrams per litre may be used at bottling when required.
