The Chenin Blanc was destemmed and lightly crushed, followed by brief skin contact and pressing. Free-run juice settled overnight before cool fermentation with selected yeast, and the wine remained on fine lees without oak.

White fruit, floral and mineral notes shape this dry Chenin. The body is light, the texture delicate and the acidity lively, with no oak influence. Apricot and peach also appear, while the finish is fruity. The wine is made entirely from Chenin grown in Mendoza and contains 12.5 percent alcohol with 1.7 grams per litre of sugar.

Golden-yellow colour leads to kumquat, honeysuckle, quince and citrus blossom. The palate is rounded and medium to full in body, with crisp acidity, yellow fruit, fresh ginger and pineapple through a long finish. Chenin Blanc comes from Simonsberg/Paarl and Perdeberg. Wild-yeast fermentation uses barrels and tanks, with part of the wine spending twelve months in French oak and regular fine-lees stirring.

Freshly picked apple, hay, pear and lemon-lime zest appear with a mineral undertone. The fruit comes from old, certified-organic Chenin vines. It was direct pressed in Washington, settled overnight and transferred in sealed tanks. Fermentation took place partly in a 1,000-litre cask and partly in concrete. The wine has low alcohol and high acidity.

Fine, persistent bubbles rise through a pale-yellow colour. The bouquet combines Chenin freshness, Chardonnay flowers and Cabernet Franc fruit. A second fermentation takes place in bottle, and the wine ages on its lees for at least twelve months in tuffeau cellars.

Organically farmed Chenin comes from Arete Vineyard in Othello, Washington. The fruit was whole-cluster pressed, settled overnight and racked off gross lees. Fermentation began in stainless steel, then completed in bottle before disgorgement after five months on the lees.

The appellation's average growing season runs from April 1 to November 1.

Gamay Noir accounts for seventy percent of the field blend, with thirty percent Chenin Blanc. The organically farmed fruit comes from Apeiron Vineyard in the Okanagan Valley and was harvested on September twenty-seventh. Maturation lasted three months in neutral French barrique, and bottling took place on February ninth. Alcohol is 11.4 percent, acidity 5.9 grams per litre and added sulphites sixteen milligrams per litre.

Dry-farmed Chenin vines grow in decomposed Malmesbury shale on the Tygerberg hills, fifteen kilometres from the ocean. Six hours of skin contact and overnight settling precede fermentation in French oak vessels of several sizes. The wine remains on its lees in barrel for fourteen months. White peach, pear, toasted almond and wood spice accompany a creamy palate and white-grapefruit acidity.

Rigour & Whimsy 2025 Mnemosyne Chenin Blanc Pét-Nat
Canadian Sparkling
Made entirely from Chenin Blanc grown organically at Apeiron Vineyard in the Okanagan Valley, this pét-nat has 11.3 percent alcohol and acidity of 9.8 grams per litre. The fruit was harvested on October 9 and the wine was bottled on November 12, with seventeen milligrams per litre of sulphites added. Bottle ageing lasts two months, and residual sugar is 0.2 grams per litre.
Clos du Tue-Boeuf 2020 Tutti Frutti Rosé
French Rosé
An experimental field blend brings together Gamay, Pineau d’Aunis, Chenin, Menu Pineau and Meslier. The grapes come from a 0.3-hectare parcel on flint clay and are purchased from organic growers. The vines are ninety years old, and the reported yield is twenty-five hectolitres per hectare. Fermentation and ageing last eight months in a Burgundy barrel.

Almond, Granny Smith apple, honeyed flowers and mineral notes appear in a dry, delicate profile with present acidity. The wine is made entirely from Chenin Blanc grown on tuffeau limestone with sand and clay topsoil. Natural fermentation remains below seventeen degrees Celsius. Ageing lasts six to eight months in stainless steel, followed by light filtration and the first sulphur addition at bottling.

Citrus pith, Bosc pear and fynbos accompany a fine texture and a saline finish. Chenin comes from four dry-farmed, granitic Paardeberg vineyards, with vines averaging forty years. Around five percent of the fruit receives skin contact. Native fermentation and ten months on lees take place in older French barrels, while the finished wine is medium bodied.
