Made from sun-dried Pedro Ximénez and aged for an average of 30 years in American oak through the criaderas and solera system, it suits dark chocolate, vanilla ice cream or acidic fruit.
Larios Málaga Pedro Ximénez–Moscatel
Mahogany-toned and sweet, this traditional Málaga liqueur wine layers sun-dried grape, liquorice, toffee, roasted nuts and coffee. The palate is savoury and silky, with balanced richness and a long, elegant finish. Built from Pedro Ximénez and Moscatel de Málaga, with a small addition of concentrated grape must, it matures statically in oak. Pour it with chocolate desserts or enjoy a small glass after dinner.
Alvear Pedro Ximénez de Añada 375 mL
Luminous amber in the glass, this naturally sweet Pedro Ximénez is rich with raisin, date, fig, honey, quince and citrus preserve. Its dense, silky texture is refreshed by gentle acidity, leaving a broad and persistent finish without heaviness. Made from sun-dried fruit from a single harvest in Montilla-Moriles, it is rewarding with foie gras, blue cheese, nuts, vanilla ice cream or fruit-based desserts. Serve lightly chilled.
El Maestro Sierra Pedro Ximénez 375 mL
Sun-dried grapes yield a dense, sweet and silky fortified wine with exotic spice, red-fruit and caramel notes. Lively acidity keeps the richness lifted and almost refreshing. After pressing, the must is fortified to stop fermentation, clarified, fortified again and transferred to American-oak butts for oxidative ageing through the solera and criaderas system. Serve at room temperature with blue cheese.
Alvear Fino Montilla-Moriles NV
Straw colour accompanies an assertive, yeasty aroma with a crusty-bread note. The palate is clean and tangy, with a refreshing finish and a soft texture. Pedro Ximénez wine is aged biologically under a clear layer of flor yeast, which protects it from oxidation and gives the style its characteristic aroma and flavour. The wine contains fourteen-point-five percent alcohol.
Lustau Pedro Ximénez San Emilio 375 mL
Pedro Ximénez grapes are sun-dried after harvest to concentrate their natural sugar. The wine ages for twelve years in Jerez de la Frontera. Deep mahogany colour with an iodine-coloured rim accompanies floral, citrus, dried-fruit and spice notes. The palate is very sweet, smooth and velvety, with pleasant acidity and a full, long profile. Alcohol is seventeen percent.
Alvear Amontillado Montilla-Moriles
Dry and light-bodied, this Amontillado combines toffee, butter pecan and apricot with burnt banana, spice and almond paste. A mild mushroom note and dried-fruit character add savoury depth, while the finish is nutty. Made from Pedro Ximénez, the wine spends about eight years in a solera system. It comes from Montilla-Moriles and is bottled at seventeen percent alcohol.
Bodegas Hidalgo La Gitana Triana Pedro Ximénez
Dark mahogany with iodine reflections, the wine combines dried fruit, mature fruit, raisins and toast. Its palate is velvety, structured and dense, with plum and raisin flavours and a persistent finish. Made entirely from Pedro Ximénez, the wine reaches fifteen percent alcohol and comes from Jerez-Xérès-Sherry. The fruit is dried in the sun for several days before vinification.
El Maestro Sierra Cream Sherry
Almond, prune, raisin, caramel, roast coffee and tobacco form the aromatic profile. The palate is rich and sweet, with balancing acidity, a round texture and good intensity. Cinnamon and walnut appear on the finish. The blend combines fifteen-year-old Oloroso with five-year-old Pedro Ximénez, which accounts for thirty percent, followed by four years in old American oak through the solera system.

Perfumed and subtle on the nose, with toasted nuts, polished wood and a faint iodine edge. The palate is intense yet finely balanced, combining deep saline character with precise oxidative complexity. Sea salt, dried citrus peel and savoury spice keep the texture focused rather than heavy. The finish is exceptionally long, dry and crisp, leaving an elegant mix of coastal minerality, nuttiness and mature depth.

Deep amber and concentrated, with roasted almonds, orange peel, molasses, tobacco and a fine smoky edge. The palate is full and smooth, balancing dried fig, toffee and dark chocolate with tangy mineral freshness and a distinctly saline line. Its off-dry richness closes long, nutty and gently smoky. Serve slightly chilled with pâté, blue cheese, glazed duck or a dark chocolate dessert.
Toro Albalá NV Fino Eléctrico Bombilla
Green-tinged straw in colour, with toasted almond, fresh bread and a light saline note. The palate is bone dry and lively, balancing savoury depth with bright acidity before a gently bitter finish. Serve well chilled with olives, Iberian ham, fried fish, seafood, Manchego or roasted almonds.
