Straw colour accompanies an assertive, yeasty aroma with a crusty-bread note. The palate is clean and tangy, with a refreshing finish and a soft texture. Pedro Ximénez wine is aged biologically under a clear layer of flor yeast, which protects it from oxidation and gives the style its characteristic aroma and flavour. The wine contains fourteen-point-five percent alcohol.

About Bodegas Alvear
Diego de Alvear y Escalera established Bodegas Alvear in Montilla in 1729, beginning a family story that now reaches its eighth generation. More than fifty relatives share ownership, with several involved in the business. Fino C.B. takes its initials from cellar master Capataz Billanueva, who marked his favoured casks with those letters.
Pedro Ximénez is the focus of the house’s wines, grown on chalk-rich albariza soils in the Sierra de Montilla and Moriles. The cellar makes dry Finos and Amontillados as well as naturally sweet wines from sun-dried grapes.
