González Byass Tío Pepe Fino Sherry

Pale straw colour is clean and bright. Bakery aromas sit with almonds, chalk and flor. The palate is very dry, savoury and saline, with a lightly bitter note and a long, complex finish. The wine is made entirely from Palomino and undergoes biological ageing beneath flor through the criaderas and solera system for at least four years in American oak. Alcohol is fifteen percent.

About González Byass
González Byass began in Jerez in 1835, when Manuel María González Ángel entered the sherry trade; Robert Blake Byass joined him soon afterward. The company remains family-owned. Tío Pepe takes its name from González's uncle José de la Peña, who helped create the pale, very dry wine in 1841.
The house's fino is made from Palomino grown on chalk-rich albariza soil and aged beneath a layer of yeast known as flor. In its Jerez cellars, American-oak casks hold wines ranging from dry fino to rich, sweet sherries, including long-aged styles.
