Macabeo and Xarel-lo form the wine base, which is fortified and infused with a broad botanical mix before resting in oak. Domaine des Sarradels 2016 Al Canon
Pear, pale orchard fruit and a gentle menthol note meet a lightly cloudy, textural white. Soft bubbles accompany buttery biscuit and yellow-fruit flavours. Macabeo, Parellada and Xarel-lo form the blend, and each variety is fermented separately in stainless steel. The base wines are then blended and bottled for a second fermentation with yeast in the bottle. This dry sparkling wine comes from Penedès in Spain and carries eleven and a half percent alcohol.
Pere Ventura Chic Barcelona Brut Cava NV
Macabeo, Xarel-lo and Parellada are fermented separately in stainless steel before blending. A second fermentation takes place in bottle by the traditional method, followed by at least eleven months on the lees. Greenish-yellow colour shows golden highlights and fine, persistent bubbles. Citrus, lime and green apple meet white-fruit notes and refreshing acidity. Alcohol is 11.5 percent.
Pere Ventura Primer Reserva Brut Cava NV
Macabeo, Xarel-lo and Parellada form this dry sparkling blend from Penedès. Traditional bottle fermentation is followed by fifteen to eighteen months on the lees, bringing creaminess and weight to the mid-palate. Citrus, toasted nuts and green apple shape the profile. The mousse is persistent, while the finish remains fresh. Alcohol is modest at eleven and a half percent.
Paul Mas 2024 RosOrange Vin de France
Candied citrus, orange peel and quince accompany an amber hue. The palate has a pearly texture, subtle tannins and fresh fruit. Cinsault, Grenache Noir, Grenache Gris, Macabeo and Vermentino bring rosé and orange-wine elements into the same blend. Part of the fruit is directly pressed, while another portion receives six to eight days of skin contact. The wine is organic and classified as Vin de France.
Castell d’Or Brut Organic Cava
Very pale in colour, this sparkling organic Cava shows tropical and white-fruit aromas. The palate is round, with integrated acidity and good length. Xarel·lo, Macabeo and Parellada are fermented separately before a second fermentation in bottle. More than fourteen months of bottle ageing develops the bubbles. The wine contains eleven and a half percent alcohol; the recommended serving temperature is seven to eight degrees Celsius.
Masia de la Roqua 2016 El Truc Blanc Macabeo
Citrus, floral and white-fruit notes are present in a fresh profile with good acidity. Macabeo comes from two small parcels known as dels Molats, rooted in limestone under a Mediterranean climate. Fermentation begins spontaneously without temperature control. Bâtonnage occurs near the end of fermentation, and the wine undergoes malolactic conversion. The wine contains nine percent alcohol and is made without additives.
ZENO Sparkling Rosé Alcohol-Free
Rose-gold colour and persistent mousse accompany red berries, white peach, nectarine, redcurrant and raspberry. The palate has a long, creamy finish. Made from Macabeo and Garnacha grown in single-estate organic vineyards in Spain, the wine is dealcoholized to 0.20 percent alcohol and carries 18 grams per litre of residual sugar. The wine is vegan.
Parés Baltà Cava Brut B Organic NV
Pear, apple and toast appear in a pale-yellow sparkling wine with a fresh, lively fruit profile. The texture is light and soft, and the finish is pleasant. Macabeo, Xarel·lo and Parellada form the blend. The wine is certified organic, biodynamic and vegan-friendly. Its fruit comes from high-altitude vineyards in Pontons, and the cuvée undergoes a second fermentation in bottle.
Maria Rigol Ordi 2019 Reserva Brut Nature Cava
Ripe peach, green apple and lemon peel appear with toasted nuts, butter, bread dough and vanilla. Persistent flavours continue through the finish. Macabeo, Parellada and Xarel·lo form the blend. Traditional-method production includes a second fermentation in bottle and at least twenty-four months of bottle ageing, with no sugar added after disgorgement. The wine contains 11.5% alcohol.
Mendall 2024 Capa Blanca Skin-Contact White
White Grenache makes up sixty percent of the blend, with twenty-five percent Macabeo and fifteen percent Moscatell. This is a skin-contact white from a producer based in Pinell del Brai, Terra Alta. The vineyard work follows biodynamic principles, fermentation is spontaneous and no sulphur dioxide is added. Each vintage is handled individually, with the wines intended to reflect the grower, grape and place.
Pepe Mendoza 2021 Pequeñas Producciones Tinaja de Padilla Velo de Flor Alicante
Scrubland, jasmine and night-blooming jasmine accompany a dry, chalky and saline profile. Macabeo and Merseguera each account for forty-eight percent of the blend, with four percent Moscatel. The varieties are fermented separately with native yeasts, then blended and matured for six months in small Padilla amphorae. A naturally developing layer of flor shapes four months of the ageing. Production totals 3,500 bottles.
Baldovar 923 2021 Rascaña Merseguera-Macabeo Orange Wine
The colour is bright yellow with golden reflections. Peach, apricot, lavender and pine resin appear with salinity and earthiness. The palate is velvety, fluid, fresh, tense and voluminous. The blend is seventy percent Merseguera and thirty percent Macabeo. Skin contact and spontaneous fermentation are used. Maturation lasts ten months in stainless steel, used 500-litre barrels and a 250-litre clay vessel.
Recaredo 2018 Terrers Brut Nature
Fine bubbles carry a bone-dry, elegant profile, with tension and ripeness held in careful balance. The palate is long, nuanced and distinctly wine-led, its generous fruit kept fresh by a taut, precise frame. A composed sparkling wine with more depth than froth. Serve with oysters, jamón, grilled fish or aged cheeses.

Pere Mata NV Cupada Rosé Cava Brut Nature Reserva
Pale strawberry, orange zest and rose petals rise through fine, persistent bubbles. The palate is dry and creamy, with bright red fruit held in a clean, precise frame. Citrus-driven acidity sharpens the finish, while extended lees ageing brings measured depth without overt breadiness or weight.
