Cabernet Sauvignon accounts for seventy percent of the blend and Agiorgitiko thirty percent. The varieties were vinified separately after a short cold soak, then fermented in stainless steel with regular pump-overs. Following malolactic conversion, the wine matured for twelve months in French oak, one third new. Sour cherries and sweet spices accompany blackberry, pepper, leather and a vegetal note. The palate has pronounced acidity, fleshy tannins and a persistent finish.

Citrus, bay leaf, lime blossom and ripe white peach meet juicy acidity, roundness and mineral character. The finish is concentrated, lingering and saline. Assyrtiko comes from young vines in the mountainous vineyards of Amyndeon. The grapes are cooled overnight and cold macerated. After fermentation, the wine spends four to five months on its lees. This dry white contains 13.5 percent alcohol and is classified as sustainable and vegan.

Raspberry, tart cherry, ripe red fruit, white pepper and herbal notes accompany a medium-bodied palate. Rustic tannins, fresh acidity, a light green vegetable note and an earthy character are also present. Limnio is the sole grape variety. The wine is aged in old French oak barrels and bottled without additional sulphur. The fruit is certified organic, and the wine carries the PGI Macedonia designation.
