Dry, this white combines eighty percent Malagousia with twenty percent Xinomavro vinified as blanc de noir. Indigenous yeasts carry the fermentation, with no oenological substances or added sulphites. The wine is bottled without filtration at twelve percent alcohol. It comes from the Kioutsoukis family near Thessaloniki. Stalisma refers to a flock resting in a shaded, cool place during summer.

Citrus, bay leaf, lime blossom and ripe white peach meet juicy acidity, roundness and mineral character. The finish is concentrated, lingering and saline. Assyrtiko comes from young vines in the mountainous vineyards of Amyndeon. The grapes are cooled overnight and cold macerated. After fermentation, the wine spends four to five months on its lees. This dry white contains 13.5 percent alcohol and is classified as sustainable and vegan.

Assyrtiko grows in Macedonia on clay-loam soils at 270 to 320 metres, from vines twelve to seventeen years old. Fermentation takes place in oak with selected fresh pine resin, followed by six months on fine lees. The dry white wine has 6.5 grams per litre of total acidity, 13.5 percent alcohol and 2.8 grams per litre of residual sugar. Viticulture is sustainable.

The wine is aged in old French oak barrels and bottled without additional sulphur. The fruit is certified organic, and the wine carries the PGI Macedonia designation.
