Wild sloe berries bring a warm red colour and a rounded, fruit-led character, with the base gin’s juniper and spice providing a clear backbone. The berries are macerated for several months, building depth while a restrained level of sugar keeps the balance lightly sweet rather than syrupy. Jammy fruit, cinnamon and pine lead into a gently tart palate, followed by a long finish where ripe berry notes fade into soft spice. Serve neat, over ice or with sparkling wine.
