Rose-petal colour accompanies redcurrant, thyme, peony, grenadine, raspberry and citrus. The palate is delicate, with citrus and red-berry flavours followed by a long, fresh finish. Cinsault is harvested at night, and the grapes undergo six hours of pre-fermentation maceration. The soils include limestone, dolomite, marl, schist and volcanic rock. Suggested pairings include seafood, fish and oysters.
