Whole clusters are pressed into vat, then the settled wine is racked into barrel for indigenous fermentation. It ages on fine lees for two winters in oak puncheons and is bottled unfined and unfiltered.

Bunches are destemmed by hand while maintaining at least eighty percent whole berries. Fermentation begins in stainless steel for about two weeks. Free-run juice is captured and the pomace is gently pressed by hand. The wine finishes fermentation in foudre, is racked off its lees and matures in foudre for twelve months. Spice and pepper accompany a soft, slender profile.
