Trebbiano di Spagna comes from certified-organic, twenty-five-year-old vines rooted in clay and limestone. Fermentation is spontaneous, and the wine is bottle-fermented, unfined and unfiltered. Yellow citrus, field flowers, aromatic herbs and mineral notes accompany citric acidity, fine bubbles and a dry, savoury finish. Residual sugar is below one gram per litre, while total sulphites remain under ten milligrams per litre.
