Fermentation is stopped early through keeving, preserving the apple juice’s own sweetness and giving the palate a soft, rounded feel. Bright fruit and gentle bubbles keep the style fresh despite its sweeter profile. Serve well chilled with pâté, soft cheese, fruit tarts or lightly spiced dishes.
