Savoury herbs lead into subtle stone fruit, citrus blossom and a gently rounded honeycomb note. Fresh acidity gives the palate definition, while a quiet touch of vanilla and fine pithy grip add texture through the long finish. About Fairview Cellars
Bill Eggert established Fairview Cellars on the Golden Mile Bench, releasing its first commercial vintage in 1997. Danielle and Dermott Hutton bought the winery in 2022, after Danielle had worked with Eggert as general manager and learned winemaking from him. Today Danielle makes the wines and Dermott manages the vineyard.
The estate’s ten planted acres focus on Cabernet Sauvignon, Merlot and Cabernet Franc. Vines are pruned and leaves removed by hand, while cellar work is kept low-intervention.
