Spanish Red
Monastrell forms sixty percent of the blend, joined by thirty percent Garnacha and ten percent Bonicaire and Merseguera. The grapes come from dry-farmed vineyards across several holdings around Ontinyent, with both shaded and sunny mountain exposures. The wine matures for four months in 225-litre French oak barrels and contains thirteen and a half percent alcohol. It is classified as a red wine under DO Valencia.

Monastrell and Bonicaire come from vines between fifty and seventy years old. Bonicaire is partly fermented with stems in clay amphora, while Monastrell goes into five-hundred-litre oak. Maturation lasts about six months. Red fruit, fruit compote, floral and balsamic notes accompany a light profile with a long, fruity finish; black fruit, sweet spice and a mineral note are also present.

Violet, ripe black fruit, smoky spice and savoury notes appear alongside dark plum, blueberry, cedar and liquorice. Bright acidity accompanies well-integrated oak, structure and weight. The single-plot wine is made entirely from Monastrell grown on sandy silt over a limestone crust at 550 metres. Forty percent of the stems are retained during a thirty-five-day fermentation and maceration in oak casks, followed by eight months in French oak.
Baldovar 923 2023 Cañada París Merseguera
Spanish White
Citrus and mineral notes accompany fresh acidity and a long finish. Merseguera comes from old bush vines planted between 900 and 1,200 metres on silica-rich sandstone and limestone marl. After selection, the grapes are destemmed, pressed gently and settled at low temperature. Spontaneous fermentation takes place in French oak and stainless steel, followed by nine months split among clay amphora, 500-litre French oak and stainless steel.
Bodega Cueva 2018 Bobal & Marselan
Spanish Red
Bobal and Marselan grow on limestone and are vinified in stainless steel. The cool-year red is medium-bodied and sleek, with freshness carried through the profile. Fermentation is spontaneous; the wine is bottled without fining, filtration or added sulphur. Ripe fruit, compote, liquorice, violet, cherry and cereal notes accompany a soft, balanced and rounded texture. Alcohol is 13.5 percent.

Spanish Red
Red berries, flowers, wild herbs and spice accompany freshness and minerality. Ruby colour has violet reflections, with lavender, geranium, strawberry, sour cherry jam, toasted wood, soft earth, structure and salinity. Mencía comes from forty-year-old vines at 980 metres on schist. Grapes were harvested by hand, and seventy percent of the wine aged in clay vessels. Production totalled 5,890 bottles.

Orange peel, rhubarb, strawberry and a Campari-like note appear in a vibrant, textured rosé with grip and a savoury finish. Bobal and Tempranillo grow on rocky soils containing fossilized coral and oyster shells. Whole bunches are pressed gently and ferment spontaneously with native yeasts. Ageing lasts ten months on fine lees in used oak, glass demijohns and stainless steel. The wine is bottled unfined and unfiltered.
Baldovar 923 2021 Rascaña Merseguera-Macabeo Orange Wine
Spanish White
The colour is bright yellow with golden reflections. Peach, apricot, lavender and pine resin appear with salinity and earthiness. The palate is velvety, fluid, fresh, tense and voluminous. The blend is seventy percent Merseguera and thirty percent Macabeo. Skin contact and spontaneous fermentation are used. Maturation lasts ten months in stainless steel, used 500-litre barrels and a 250-litre clay vessel.

Monastrell, Bonicaire, Arcos and Garnacha come from old and young plots in Els Juncarejos. Each plot ferments separately with indigenous yeasts and a high proportion of whole clusters. Maturation lasts ten months in concrete and 300-litre French oak barrels. The red wine contains thirteen percent alcohol, with a pH of 3.56 and 5.1 grams of acidity; 6,500 bottles were produced.

Light yellow colour accompanies mineral chalk, white stone fruit, delicate flowers and green herbs. The blend combines Tortosí, Trepadell, Malvasia, Merseguera and Verdil from a 2.5-hectare vineyard at 730 metres. Sandy soil is rich in chalk. The wine is fresh, with volume, length and acidity. Harvesting takes place in two passes, and production totals 2,000 bottles.

Made from Bobal in Valencia, this red comes from organically farmed vines on calcareous clay and sandy soils. Grapes are hand-harvested, destemmed and macerated in a carbonic environment with indigenous yeasts, then matured in stainless steel. It is bottled unfined, unfiltered and without added sulphur. The wine is presented here in a 1.5-litre magnum.
