Colchagua

Deep ruby colour appears alongside tobacco leaf, green tea and fresh plum. The palate is smooth, with juicy tannins and a pleasing finish. Carménère comes from Chile’s Colchagua Valley. Filled pasta with meat, gently seasoned vegetables and spiced Asian dishes are suggested pairings. The recommended serving temperature is sixteen degrees Celsius, and the wine carries fourteen percent alcohol.

The red-wine profile includes ruby-red colour with violet edges, cherry, blackberry, blackcurrant, eucalyptus, clove, nutmeg and smoky notes. Cabernet Sauvignon is the sole grape. The palate carries medium acidity, while the tannins are velvety. The wine comes from Colchagua and spends eight to ten months in French oak barrels. Its finish is pleasant and persistent.

Plum, fig, cherries in syrup, cassis, liquorice, chocolate and cinnamon accompany blackberry, green peppercorn and balsamic notes. The palate has smooth tannins and good body. Carménère makes up ninety percent of the blend, with ten percent Cabernet Sauvignon. The wine matured for twelve months in French oak, half new. Fruit comes from Apalta and Marchigüe in the Colchagua Valley.

Raspberry, blackcurrant leaf, savoury black fruit, rosemary and dried herbs appear with bright acidity. The finish is soft and somewhat dry, with pepper and balsamic notes. The blend is 36% Syrah, 24% Grenache, 20% Cabernet Sauvignon, 12% Cabernet Franc and 8% Mourvèdre. Maturation lasts twenty-two months in French oak barrels; 38% are new, and 15% of the wine matures in foudres.

Made entirely from organically grown Carménère, the wine undergoes double sorting, destemming and gentle crushing. Skin maceration lasts one month.

Carménère accounts for ninety-two percent of the blend, with eight percent Petit Verdot. Ripe blackberry, plum and blueberry appear with sweet spice, pink pepper, coffee and tobacco. The palate is balanced and silky, with fruit and a caramel-like body. Seventy percent matures for eighteen months in first-use French oak and thirty percent in second-use barrels. Alcohol is fourteen-and-a-half percent, and the finish is very long.

Black cherry, ripe plum and wild strawberry lead, with vanilla and a touch of cedar adding warmth. The palate is full but approachable, framed by firm, smooth tannins and enough freshness to keep the dark fruit focused. A savoury, gently spiced finish makes it a natural partner for grilled beef, tomato-rich pasta or roasted mushrooms.
