Callejuela Manzanilla en Rama
Spanish Fortified
Completely unfiltered, this manzanilla is energetic and savoury, with garlic, scallion, aged sheep's cheese, brine, mushroom, fresh tobacco, straw, earth and chalk. Palomino comes from the Macharnudo, Añina and Callejuela vineyards on albariza soils. The wine ferments in stainless steel, is fortified to fifteen percent and enters a solera system. It is drawn from the ninth criadera.
Alvear Amontillado Montilla-Moriles
Spanish Fortified
Dry and light-bodied, this Amontillado combines toffee, butter pecan and apricot with burnt banana, spice and almond paste. A mild mushroom note and dried-fruit character add savoury depth, while the finish is nutty. Made from Pedro Ximénez, the wine spends about eight years in a solera system. It comes from Montilla-Moriles and is bottled at seventeen percent alcohol.
Bodegas Contreras Ruiz 2025 El Sueño del Niño Moscatel de Alejandría

Made from Moscatel de Alejandría grown around Rociana del Condado, the grapes are harvested by hand in boxes during the third week of August. Winemaking includes skin contact, stainless-steel fermentation and six months on the lees, with a portion in French oak. The profile includes floral, citrus and Mediterranean-infusion notes, along with freshness, roundness, fruit and mineral tension.
Callejuela 2019 La Choza Palomino de Flor

This unfortified Palomino comes from a four-hectare plot in Macharnudo at seventy-four metres elevation. The vines are listed as fifteen years old and grow on chalk, limestone, clay and sand. After pressing, the juice ferments at controlled temperature in stainless-steel and epoxy-lined tanks. Production is listed at roughly one hundred fifty cases, with alcohol between twelve and thirteen-and-a-half percent.
Primitivo Collantes 2021 Socaire Palomino Fino
Spanish White
Golden straw colour accompanies slate, flowers, ripe white fruit and lactic notes. The palate is broad and fresh, with mint and a long finish. Palomino Fino grows in albariza soils near Chiclana de la Frontera. The dry, unfortified white matures for about twenty-four months in old Fino barrels that remain topped, allowing a light influence from flor.
Pérez Barquero La Cañada Pedro Ximénez

Raisin, fig and dried plum lead a deep, concentrated bouquet, joined by honey, cocoa and toffee. Coffee and polished oak add savoury complexity beneath the fruit. The palate is dense and unctuous, yet a clear line of acidity keeps the sweetness composed. Warm and persistent, it closes with dried fruit, cocoa, nuts and a long, elegant finish.
González Byass La Copa Rojo Vermouth
Spanish Fortified
Blood orange and dried citrus peel lead an intense aroma, followed by clove, cinnamon and a quiet minty note. The palate is rich and smooth, with Oloroso depth and Pedro Ximénez sweetness balanced by wormwood and a steadily drying herbal finish. Nutmeg, angelica and quinine add savoury complexity without overwhelming the fruit. Serve well chilled over ice with orange, or use it to bring sherry character to a Manhattan or Negroni-style cocktail.

White flowers, orange peel and fresh herbs lead a bright, aromatic nose, with chamomile and rosemary adding definition. The palate balances crisp, mineral dryness with gentle Moscatel sweetness, while wormwood and gentian bring measured bitterness.
