The palate is lively and precise, its fine mousse carrying bright citrus, chalky minerality and a subtle saline note. A measured creaminess rounds the edges before a long, pure finish of lemon, iodine and brioche. Serve with oysters, gougères, smoked trout or light hors d’oeuvres.
