About Clément Lavallée
Clément and Caroline Lavallée run a 14.5-hectare family estate spanning the Auxerrois and Chablisien from their base in Saint-Bris-le-Vineux. The siblings took over the family vineyards in 2019, the year of Clément's first estate-bottled vintage. Before returning home, Clément worked in Burgundy, Bordeaux, the Rhône and Australia.
Since the handover, synthetic chemicals and insecticides have been set aside while the domaine works toward organic certification. The cellar uses indigenous yeasts and gravity flow, with wines aged on their lees in steel or mostly older oak.
