Springfield 2020 Met Ancienne Chardonnay
The Springfield Méthode Ancienne Chardonnay is special because it was made using ancient techniques rarely used in the New World: The fermentation takes place spontaneously with wild yeast in a combination of new and used French oak barrels. There is no fining or filtration. Thus, a wine of distinctive and classical character, it will develop slowly and is made to last a lifetime. Nuances of lime, cointreau and oranges – a big wine with classical character.

Made from several parcels in the village of Morogues. Practicing organic, soils are plowed and completely hand-harvested. Aged in a combo of 70% tank and 30% wood (foudres and used 400L barrels) and for 11 months.
A classic style that is released ready to drink. Quite aromatic on the nose with a rich and powerful palate, quite full bodied for a Sauvignon Blanc and makes a great alternative to Sancerre.
Pelle 2018 Salon Rouge Morogues
100% Pinot Noir grown on Kimmeridgian marl and limestone. Aged in a combo of 70% wood *Foudres and used 400L barrels) and 30% tank for 12 months.
The terroir of the village of Morogues combined with strict vineyard practices results in a beautiful Pinot that would not be out of place in a tasting of Volnays.

100% Aglianico. “Outstanding example of what the Aglianico variety can deliver in the right hands. Ripe red cherry, orange peel and sweet herb aromas. Then rich, fresh and perfumed in the mouth, displaying outstanding cut and clarity to the vibrant red berry and blue fruit flavors. Finishes with a dusting of minerals and botanical herbs. Still very young and will age well.”
