Nerello Mascalese grows on volcanic soils, with vines averaging sixty years of age. The grapes are harvested by hand, destemmed and gently pressed. Spontaneous fermentation lasts sixty days in epoxy tanks with indigenous yeasts. Maturation also takes place in epoxy. The wine is neither fined nor given added sulphur dioxide, and filtration uses five-micron cartridges. The vineyard is farmed organically.

German White
Subtle, exotic yellow-fruit aromas accompany a tight, dense character, mineral salinity and a long, fresh finish. Basalt occurs at the surface, alongside red sandstone-derived soil and sandy loam, with clay and limestone about two metres below. Riesling ferments in 2,400-litre Doppelstück barrels and remains on full lees until July. The wine is filtered once and bottled in mid-August.

Medium-deep red-purple colour accompanies a smoky, spicy and nutty profile with smoked charcuterie. The palate is finely structured and penetrating, with fine, discreet tannins that add grip. Red berries, anise, fennel, salumi, cedar and white pepper also appear with fresh acidity. The wine is Sangiovese from Beechworth and is classified as biodynamic, vegan-friendly and sustainably made.

Citrus, saline and flinty notes appear in a tense, mineral Chardonnay from several organically farmed parcels in Chablis. The blend draws on four sites: one hectare of north-west-facing brown clay, two smaller south-facing parcels on yellow clay, and a fourth small parcel on flat land. Biodynamic and vegan classifications are also stated, and alcohol is 12.5 percent by volume.

Smooth and balanced, it closes with blackberry, red berries and a gentle echo of oak.

Dry and poised, it closes with mineral freshness, soft spice and a clean, persistent maritime finish.

Citrus and field flowers open, followed by ripe orchard fruit, cedar and a measured almond note. The palate is broad and finely textured, with fresh acidity and a distinct saline mineral line carrying the fruit. Orange pith and pear add definition through the centre, while white pepper brings gentle lift. Dry and persistent, it finishes with citrus, sweet almond and a long volcanic-mineral edge.

Several months on lees in barrel add measured texture without obscuring freshness. Serve with salami, braised pork, hearty stews or firm aged cheeses.
