Winemakers Jason Roller and Sydney Valentino work alongside master blender and distiller Tim Wilson. The two crafts meet in whiskies such as Ninety-Nine Proof, finished in Cabernet Sauvignon casks from the estate’s winery.

Toffee, maple and sweet smoke lead into orange peel, ginger, almond, cinnamon and dark fruit. The palate is rich and rye-forward, with baked cherry, raisin, licorice root and warming spice carried by a smooth, full texture. Individually distilled Ontario grains are matured and blended before a 99-day finish in Cabernet Sauvignon casks from the estate, adding polished oak and wine-toned depth. The finish is long, dry and persistent, with clove, nut and grain lingering.
