Sheringham Distillery
AboutSheringham Distillery
Sheringham Distillery began in 2015, when Jason and Alayne MacIsaac built their first distillery in a home garage in Shirley on Vancouver Island. Jason’s earlier career as a chef informs an approach to distilling based on the balance of seasonal botanicals and culinary flavours. Alayne leads the distillery as co-founder and chief executive.
Seaside Gin combines classic botanicals with locally harvested winged kelp. The liqueurs draw on other island makers, including Sooke-roasted coffee and cacao shells and husks from Victoria’s Sirene Chocolate. The distillery also makes Lumette, the non-alcoholic botanical-spirit range Alayne and Jason founded in 2018.
Sheringham Distillery Seaside Gin 750 mL
Canadian Gin
Piney juniper leads the aroma, lifted by grapefruit, bright citrus and a soft floral note. The palate evokes coastal air, with fresh pine, a measured saline edge and lavender woven through a clean botanical core. Citrus keeps the texture lively while the floral detail adds polish. The finish is long and bright, carrying juniper, lemon, orange and a gentle trace of sea brine.
Sheringham Orange & Rosemary Bitters
Canadian Other Spirits
Bright orange peel meets fresh, savoury rosemary in a vivid aromatic profile with clear coastal character. The citrus brings lift and tang, while the herbaceous side adds structure and a clean, gently bitter finish. A few dashes can sharpen a Gin & Tonic, give a spritz more definition or add a modern herbal edge to vodka, light rum and blanco tequila cocktails. It is also useful in alcohol-free drinks where layered flavour and restrained bitterness are needed.
Sheringham Aromatic Bitters
Canadian Other Spirits
A classic, versatile blend of herbs and spices designed to bring lift, depth and balance to cocktails. The profile is warmly aromatic rather than aggressively bitter, adding layered botanical character without overwhelming the base spirit. A few dashes can sharpen an Old Fashioned, deepen a Manhattan or give a spirit-forward highball more definition. It is equally useful in citrus-led drinks, where its spice and herbal structure help knit sweetness and acidity into a cleaner, more composed finish.
Sheringham Rhubarb Gin Liqueur 375 mL
Canadian Liqueur
Fresh rhubarb and bright citrus open the aroma, leading to a palate that balances tart fruit with measured sweetness. Juniper and gentle herbal notes keep the liqueur structured, while star anise and lemon peel add lift and a subtle savoury edge. The finish is lively, clean and lightly spiced. Serve chilled or over ice, top with soda or sparkling wine, or use in a citrus-led spritz where its sweet-tart character can stay focused.
Sheringham Sirene Chocolate Liqueur
Canadian Liqueur
Dark chocolate leads a rich but composed profile, with fruit, citrus and fudge adding layers around the cocoa. A lightly bittersweet edge and hints of leather keep the palate from becoming overly sweet, while gentle back-sweetening gives the texture a smooth, rounded finish. Made in collaboration with Victoria's Sirene Chocolate, it is designed for slow sipping as much as mixing. Serve neat, over ice, with coffee or in a restrained dessert cocktail where the dark chocolate remains the focus.
Sheringham Coffee Liqueur
Canadian Liqueur
Freshly roasted coffee leads a deep, aromatic profile, with espresso, roasted cocoa and vanilla giving the palate weight. Brown sugar brings restrained sweetness, while a trace of citrus and subtle spice keeps the finish from feeling heavy. Made with locally roasted coffee, the liqueur is rich but balanced, moving from dark roast into cocoa and a lightly bitter close. Serve over ice, add to hot coffee or use in an Espresso Martini where the coffee character can remain clear and direct.
