Watermelon, orange blossom, blood orange, rhubarb, strawberry and rosemary define the profile. Pinot Gris comes from two British Columbia sites: Scout Vineyard in the Similkameen and Kozier Vineyard in Naramata. Fruit from Scout Vineyard was destemmed into two qvevri, with skin ferments lasting fourteen days and three months. The Kozier portion spent seven days on skins in open-top fermenters before pressing into stainless steel. The wine was bottled unfined, unfiltered and without added sulphur.

Whole clusters of Syrah were submerged in freshly pressed Riesling juice and sealed for light carbonic maceration. Fermentation took place in qvevri, with nothing added or removed. Dried salmonberry, cherry bubblegum, rhubarb, blackberry and a penny-like note create a fragrant profile with delicately integrated tannins. The fruit comes from regeneratively farmed sandy soils in the Similkameen Valley.

Riesling from the organically farmed Stonehouse Vineyard in Oliver is destemmed and fermented spontaneously on the skins for twenty-one days. The wine spends two years on its lees in neutral oak barrels and puncheons before unfined, unfiltered bottling with twenty parts per million of sulphur. Chewy tannins and bright acidity meet citrus peel, dried apricot, sea salt and cardamom.

Epicure, La Crescent, Gewürztraminer, Pinot Gris and Riesling make up the blend. The wine receives between seven and twenty-one days of skin fermentation, then spends six months in qvevri and neutral barrels before being bottled unfined and unfiltered. Brisk acidity meets citrus, citrus peel, gentle tannins, savoury character and black tea, with only a small sulphur addition.

Riesling comes from Picone Vineyard atop the Niagara Escarpment in Ontario’s Vinemount Ridge. Oneida clay and clay loam sit over dolomitic and argillaceous limestone. The juice cold settled during transport, then fermented naturally in old neutral barrels and aged in neutral barrel. Orchard fruit includes apple, pear and peach, with spice and a leaner texture. Bottling was unfined and unfiltered, with 12.7% alcohol.
