Deliberately oxidative and deeply savoury, with mature red fruit, dried herbs and a firm mineral line. High-altitude Grenache from Cebreros grows on decomposed granite and slate, then follows a solera-like tradition in tinajas and barrels, building concentration and complexity over time. Serve slightly cool with roast lamb, aged Manchego or mushroom-rich dishes.
