AboutChâteau Pavie

Château Pavie occupies 42 contiguous hectares on the limestone plateau, slope and foot of the hill above Saint-Émilion. Ferdinand Bouffard assembled much of the vineyard during the 1870s and 1880s, and Albert Porte unified the remaining properties in 1919. Gérard and Chantal Perse acquired Pavie in 1998; the Saint-Émilion classification moved the estate into its highest tier in 2012 and confirmed that standing again in 2022.

Merlot accounts for half of today’s vineyard, with Cabernet Franc at 30% and Cabernet Sauvignon at 20%, each matched to a different part of the hill. Vineyard work is organised across 21 parcels, with hand harvesting, no herbicides since 1998 and horses used for some cultivation since 2013. Wines from individual parcels are made in separate vats and spend roughly 18 months in barrel.

Château Pavie 2000 Saint-Émilion Grand Cru

French Red
$999.99

Ripe black cherry and salty plum lead, layered with crushed rock, dried flowers, tobacco leaf, smoke, cocoa and liquorice. The palate is full-bodied, deep and concentrated, with abundant dark fruit carried by a stony mineral line. Long and powerful yet composed, it finishes with savoury freshness and remarkable persistence.
