Peppery aromatics open a rich Belgian-style tripel, followed by rounded cereal character and ripe yellow fruit. The palate is full and energetic, with a firm initial attack balanced by fruit and a progressively building hop bitterness. Despite its weight, the finish stays dry and controlled, giving the beer focus and length. Serve cool with roast poultry, washed-rind cheese, mussels or lightly spiced dishes.
