Australian Sparkling
Savagnin from a certified biodynamic block in McLaren Flat forms this pét-nat. The wine is bottled without fining, filtration or added sulphur. Bright bubbles carry soft peach and pear, with fine fruit, flowers and lemon curd. The profile is clean, fresh and lively. The fruit was fully destemmed, pressed to stainless steel and completed a natural secondary fermentation in bottle.

French Sparkling
Chardonnay makes up half the blend, with Savagnin and a combined portion of Pinot Noir, Trousseau and Poulsard. The grapes are harvested exclusively by hand and pressed as whole bunches. A second fermentation takes place in bottle, followed by at least twelve months on laths. Fine bubbles accompany white fruit, citrus and floral notes, with a lightly saline character and a taut finish.

Meyer lemon, apple cider and yellow pear appear with candied ginger and spiced walnut. Ripe white fruit, fine spice, salted almond and light oxidative notes are also present. The palate is dense and mineral, with richness and a long finish. The blend is seventy percent Chardonnay and thirty percent Savagnin, naturally fermented and matured in used 225-litre Burgundy barrels, with a small portion raised under flor.

Savagnin comes from the Les Sarres site at Buvilly, where the vines face east on grey marl with gryphaea from the lower Bajocian, Lias and Triassic. The wine has body and depth. Vineyard and cellar work includes restricted yields, hand harvesting, slow pressing, indigenous yeasts and long maturation. This Jura terroir is well suited to Savagnin.

French White
White flowers, fresh herbs, parsley, eucalyptus and cut grass appear with coriander seed, toasted sesame and wasabi. The palate includes Granny Smith apple, spiced pear, rhubarb and marinated plum, with lively acidity and an energetic finish. Savagnin grows on white Lias marl. Fermentation uses indigenous yeast without added sulphur, and maturation lasts one year, mainly in foudres. Serve at 12°C.

French White
Peach, pear, citrus and floral notes accompany a fresh, clean profile with saline minerality, volume and a long finish. Savagnin is hand harvested, gently pressed and cold settled. Alcoholic and malolactic fermentations take place in oak casks, with maturation conducted by the ouillé method. The selected vineyards lie in Montigny-lès-Arsures on grey Lias marl. Suggested service is 9 to 11°C.

French Fortified
Walnut, dried fruit, prune, spice and wood accompany a supple, rich profile with freshness. The finish is persistent, with caramel and walnut. The blend combines two parts Chardonnay and Savagnin juice with one part old marc. It spends thirty-six months in cask and has seventeen and a half percent alcohol. This is a white vin de liqueur from Jura.

French White
Citrus and dried-fruit notes appear with mineral character, freshness and intensity. Savagnin is the sole grape, drawn from vines averaging about sixty years old. The fruit is hand-harvested and directly pressed, with spontaneous fermentation by indigenous yeasts. The wine spends two years in 228-litre barrels and is bottled without fining or filtration. The wine is organic and contains thirteen percent alcohol.

Dried fruit, candied citrus and floral notes accompany a textured, almost tannic palate, mineral freshness and a long, vibrant finish. The blend combines 80 percent Savagnin with 20 percent Chardonnay. Whole bunches macerate for twenty-one days, while fermentation begins naturally. Ageing takes place first in amphorae and then in foudres for a total of twenty-two months.

Rich and gently sweet, with dried fig, red currant and delicate floral notes lifted by a subtle honeyed tone. The palate is generous yet balanced, bringing ripe fruit and the warmth of aged marc into a smooth, persistent finish. Serve well chilled as an aperitif or with melon, walnut desserts, blue cheese or fruit tart.
