The wine contains twelve and a half percent alcohol and 0.6 grams per litre of residual sugar.

The cuvée pays tribute to vine smugglers who worked around restrictions to make wines from the grapes they wanted.

Hand-harvested Roussanne was fermented at cool temperature and bottled early to preserve fresh fruit. Quince and pear-drop aromas appear with green apple and grapefruit. The wine carries 13.5% alcohol, 5.5 grams per litre total acidity and 1.9 grams per litre residual sugar. This still white comes from Stellenbosch in South Africa's Western Cape and is suitable for vegans and vegetarians.

Floral aromas of pineapple, honeysuckle and jasmine include brioche and vanilla. The palate is crisp, with pear, honeydew melon and apricot. Bright acidity accompanies a lengthy finish of citrus, mineral and spice. Whole clusters were pressed, and the wine matured for six months on its lees in French oak, with twenty percent new wood. Alcohol is 14.1 percent.

Winemaking includes pneumatic pressing, static cold settling, four months on the lees and no malolactic fermentation. Roussanne is vinified and matured separately in barrel before final blending.

Fermentation takes place on the skins for twelve days in an open-top wooden vat. Maturation lasts ten months, with sixty percent in neutral French oak. The finish is long, with stone fruit and spice.

French White
Equal parts Marsanne and Roussanne are vinified separately: Marsanne in tank and Roussanne in used oak. The wine is juicy, with clear mineral character. Its luminous yellow-green colour accompanies ripe white fruit, lees, chopped herbs, chamomile and red apple. A lemon-soap note is also present. The profile is rich and fruity, and the alcohol level is thirteen and a half percent.

Fresh apple, lemon and quince define the profile. Roussanne grown on loess soils forms the entire wine. Fermentation and maturation take place in oak, half of it new. The wine is full-bodied, dry and lightly oaked. It is bottled at 13.5 percent alcohol. The low-yielding Roussanne develops in small, tightly packed bunches. Finesse and delicacy are also present.

Counoise accounts for thirty percent of the blend, Grenache twenty-five, Syrah and Mourvèdre fifteen each, and Clairette, Bourboulenc and Roussanne five each. Vatting lasts eighty days. Maturation lasts eighteen months in barrel. The wine is bottled without fining or filtration.

Roussanne and Bourboulenc come from two separate parcels. Fennel and fleshy fruit appear in a smooth white. The grapes are hand harvested in fifty-kilogram boxes, then cooled for settling before alcoholic fermentation. Malolactic fermentation is not carried out. Maturation lasts seven months on fine lees. The vineyards are farmed organically, and the finished wine has fourteen percent alcohol.

The wine is produced under IGP Costières de Nîmes.

Nearly black colour accompanies red fruit, blackcurrant, blackberry, spice, thyme and lavender. The bouquet is elegant, rich and round, with fig, cherry, blackcurrant and stewed fruit, together with acidity and delicate tannins. Grenache and Mourvèdre each account for thirty percent of the blend, Counoise and Syrah each ten percent, and Cinsault five percent. Eight other permitted varieties make up the remaining fifteen percent.

Deep ruby colour appears with a fresh chocolate note. The wine is round, with ripe fruit, soft tannins, good length, acidity and balance. Grenache and Mourvèdre each account for thirty percent of the blend, with fifteen percent Syrah, ten percent Counoise and five percent Cinsault. The remaining ten percent comprises eight other permitted varieties. The grapes are grown organically.

Yellow stone fruit, pastry and honey appear in this white. The Roussanne is round and rich, with a fresh finish. Fruit comes from granitic sand in Malleval and Chavanay, grown on south-east-facing hilltops. Grapes are hand harvested, gently pressed and settled. Barrel fermentation uses no new wood, followed by nine months on lees with stirring.

Most fermentation and ageing take place in concrete, with a smaller portion using 600-litre oak vessels.
