Ripe mulberry, blackberry and damson plum are joined by light soy and cedar frond. The texture is light, with soft tannins, mouthwatering acidity and a long finish. Gamay Noir, Maréchal Foch and Pinot Noir come from Cowichan Valley and the Saanich Peninsula. Sixty percent of the fruit was crushed, destemmed and fermented on skins; the remainder underwent carbonic maceration. Indigenous yeast completed fermentation before two years in barrel.

It is made entirely from Marechal Foch grown in the Pozza Vineyard in the Olalla Gap. Whole berries ferment carbonically under carbon dioxide before pressing, stainless-steel fermentation and a rest in old 500-litre puncheons. The wine is neither fined nor filtered and carries 12.8 percent alcohol.

Marechal Foch from Hancock Vineyard in Naramata forms this sparkling red. The juice undergoes an open-top wild fermentation in stainless steel, then is racked from gross lees and bottled with sugar for secondary fermentation. The bottles are riddled and disgorged, with twenty parts per million of sulphur added.

The variety was developed in Colmar for resistance to cold and vineyard disease.
