Counoise from Coyote Canyon Vineyard in Horse Heaven Hills was harvested on September ninth and fully destemmed. A spontaneous fourteen-day fermentation took place in open-top fermenters, followed by ten months in neutral oak. The wine was bottled without fining or filtration.

Fruit is hand harvested, not crushed or destemmed, and the varieties are vinified together with long vatting. Maturation takes place in foudres and new wood for six to twelve months.

Eight other permitted varieties make up the remaining fifteen percent.
