Greek White
Chamomile, green tea and bergamot appear with basil, citrus zest and white pepper. The palate is steely and oily, with sharp acidity, white nectarine, tea, ginger, tension, salinity and a mineral finish. Fruit comes from a single Megalochori vineyard beside the caldera rim, planted to ungrafted basket-trained Assyrtiko more than 150 years old. Fermentation takes place in stainless steel; the wine spends eleven months on lees with regular stirring.

Citrus and stone fruit accompany toast, nutmeg, mineral and smoky notes. The Assyrtiko comes from ancestral vines more than 120 years old in Pyrgos, Exo Gonia, Fira, Akrotiri and Megalochori. Fermentation and ageing use stainless steel, old barrels, cement and clay. The wine spends at least one year in the cellar and carries 14 percent alcohol.

Chamomile and cardamom appear with citrus and green-fruit notes of bergamot, lime and pear, while minerality is also recorded. The wine is full-bodied, with tannins that are present but soft. Pepper, clove and a long aftertaste add further detail. This dry white is made from Assyrtiko and carries 13.5% alcohol under the Santorini P.D.O. designation.

Ripe peach, lemon and fresh citrus lead a focused, mineral bouquet. A saline note and subtle herbal lift bring the volcanic character into sharper relief. The palate is rich yet precise, with firm acidity giving shape to the stone fruit and citrus. Long and energetic, it closes with lemon, peach, sea-salt freshness and a clean stony finish.
