Calvados Pays d'Auge

Quince paste and candied orange open the nose, joined by cinnamon, black pepper and blond tobacco. The palate is rich but composed, layering caramelized apple and warm compote with candied apricot, cocoa and mature oak. Double distillation and more than nine years in old oak casks give the spirit depth and length without losing its apple-driven character. The finish brings warm apple compote and a broad blend of spices. Serve neat in a tulip glass after dinner.

Baked apple and warm spice open the nose, with flowers, almond and polished oak developing underneath. The palate is dense and rounded, bringing ripe orchard fruit together with vanilla, gentle tannin and the nutty complexity of long ageing in old Cognac casks. A subtle rancio note adds savoury depth without obscuring the fruit. The finish is long, composed and warmly spiced, carrying apple, oak and toasted nuts. Serve neat after dinner at cool room temperature.
