Barrel fermentation and malolactic fermentation are followed by eight months in French oak. Coconut and vanilla bean appear with macerated pear, brûléed pineapple, crunchy honeycomb and rum-raisin ice cream. Bright acidity and sea salt are also present. Made entirely from Chardonnay, the wine contains 13.8% alcohol and comes from Mariposa vineyards in British Columbia’s southern interior.
