Yering Station 2021 Little Yering Chardonnay
Ripe stone fruit and honey lead onto a round, gently viscous palate with moderate length. Melon and ripe red apple add a fresh, acid-driven line, while a slight nutty lees note appears through the middle. Fruit comes from the Pyrenees and Yarra Valley, and most of the wine is fermented in tank. The style is light-bodied, clean and fresh.
BLK + BLU 2023 Blend No. 4 Shiraz Cabernet
Inky purple-red in colour, the wine has raspberry and cherry-candy aromas. Black raspberry, blueberry and black cherry appear with spice, mint, eucalyptus and a hint of oak. The palate is youthful and rich, with slippery tannins and balanced structure. Shiraz accounts for fifty-four percent of the blend, while Cabernet Sauvignon makes up the remaining forty-six percent. Alcohol reaches fourteen and a half percent.
Castagna 2018 La Chiave Sangiovese Beechworth
Medium-deep red-purple colour accompanies a smoky, spicy and nutty profile with smoked charcuterie. The palate is finely structured and penetrating, with fine, discreet tannins that add grip. Red berries, anise, fennel, salumi, cedar and white pepper also appear with fresh acidity. The wine is Sangiovese from Beechworth and is classified as biodynamic, vegan-friendly and sustainably made.
Maidenii Dry Vermouth
Apricot and bright citrus open an aromatic nose, followed by cinnamon, anise and a distinctly savoury herbal line. Strawberry gum, river mint, sea parsley and lime leaf bring a vivid Australian botanical character, while wormwood and gentian supply clean bitterness. The palate is dry, floral and fresh, with restrained fruit and a crisp finish. Serve lightly chilled on its own, over ice with tonic, or use it to give a Martini extra aromatic detail.
