Alcohol is removed under vacuum at low temperature before the wine is carbonated. The finished sparkling wine is dry, contains zero percent alcohol and is classified as vegan.
Château Moncontour 2012 Vouvray Moelleux
This still white is made from Chenin Blanc and classified as moelleux. Alcohol is twelve percent. The château stands at the western entrance to Vouvray and overlooks the Loire. Built in the fifteenth century and renovated in the eighteenth, the property includes more than one hundred hectares of vines and a cellar beneath the hillside.
Domaine Roc de l’Abbaye 2022 Sancerre Rouge 375 mL
Peony-red in colour, the wine brings violets, rose, blueberry, blackberry and black pepper. Strawberry and raspberry are also present. The texture is supple, with firm, fine tannins and a fresh, persistent finish. Pinot Noir comes from twenty- to forty-five-year-old vines rooted in silex. The fruit was fully destemmed and macerated for about three weeks with pumping over and punch-downs.

Fine bubbles accompany white-fruit and floral scents. The palate is lively and powerful, with apricot and a rich, harmonious character. This white sparkling wine is made entirely from Chenin in Vouvray using the traditional method. The cuvée comes from a family estate in the Loire Valley. The wine contains 12.5 percent alcohol and 6.6 grams per litre of residual sugar.
Château du Hureau 2017 Lisagathe Saumur-Champigny
Cabernet Franc comes from old vines rooted in clay and sand over Turonian limestone. Harvesting is by hand, followed by sorting and complete destemming. Maceration lasts twenty-five to thirty-five days, and malolactic fermentation takes place in tank. The wine matures for eighteen to twenty-four months in foudres and barrels. Its profile combines depth and power with finesse.
Nicolas Joly 2024 Clos de la Bergerie Savennières Roche-aux-Moines
Tonic character, fine bitter notes, vibrant texture, ripe-fruit flavours and freshness are present in this Chenin. The seven-hectare parcel has moderately sloped, east-facing ground and schist soils, with vines around thirty years old. Biodynamically grown fruit is vinified without chaptalisation, temperature control or a second yeast addition. Ageing takes place in seasoned oak, with one or two rackings and batonnage, and the wine is unfiltered.
Domaine Claude Riffault 2020 Sancerre Rouge La Noue
Garrigue, wormwood, violet, raspberry and blueberry accompany a silky texture, with chalky and lightly stemmy character. Fruit cake and tea leaf add further detail. Made entirely from Pinot Noir with whole bunches, the red comes from Sancerre in the Loire Valley. The organically farmed wine has a deep ruby colour, red-fruit detail, balance and a persistent finish.
Domaine Lucien Crochet 2022 Sancerre Les Calcaires
Golden-yellow colour accompanies chalk, pale stone fruit, lemongrass and mild toast. The wine has volume, crisp acidity and mild extract. Savoury fruit and a creamy texture accompany a long, vigorous finish. Made entirely from Sauvignon Blanc, it draws fruit from chalky, south-facing parcels in Sancerre. Mineral and saline details are also present, and the fruit comes from calcareous soils in Bué.
