Gamay Noir, Maréchal Foch and Pinot Noir come from Cowichan Valley and the Saanich Peninsula. Sixty percent of the fruit was crushed, destemmed and fermented on skins; the remainder underwent carbonic maceration. Indigenous yeast completed fermentation before two years in barrel.
