About La Chablisienne
La Chablisienne began in 1923, when a group of growers rallied by Abbé Balitrand formed a cooperative in the heart of Chablis. Their immediate purpose was practical—pooling resources during a difficult economy and finding a market for their wines. In the mid-1950s, members began delivering grape must rather than finished wine, putting winemaking in the cooperative's hands.
The wines span Petit Chablis, Chablis, Premier Cru and Grand Cru. Growers press close to the vineyards; La Chablisienne then handles clarification and fermentation, using temperature-controlled steel or, for selected crus, oak barrels.
