The palate is finely textured and remarkably fresh, with compact bubbles, chalky salinity and a dry, lightly bitter finish. Extended cellar ageing has brought complexity without dulling the wine’s energy. Serve in a generous white-wine glass with turbot, roast poultry, lobster or mature Comté.
