Soft tartness shapes this barrel-aged wild ale, with grain, citrus and gently rustic fermentation notes held in careful balance. Malted barley and wheat provide a rounded base, while aromatic Cascade hops add lift without assertive bitterness. Long fermentation in oak builds subtle wood, earth and vinous depth before a dry, complex finish. Serve cool rather than ice-cold with roast chicken, washed-rind cheese or charcuterie.
