Crisp crabapple fruit arrives with an earthy, savoury edge and a firm tannic grip. Hyslop and Dolgo crabapples give the palate sharp definition, combining lively acidity with structure more commonly associated with table wine. The finish is dry, focused and persistent rather than soft or sweet. Serve chilled with roast pork, charcuterie, aged cheddar, mushroom dishes or other earthy, savoury fare.
