Incipit 2019 D’Or et de Pierres

Made from Gamay, this red wine comes from Beaujolais. The grower established his project in the Pierres Dorées area south of the region. The small vineyard is worked without mechanized equipment, and a grelinette is used around the vines. Its parcels include sand, clay-limestone and golden-stone soils. Harvesting is done by hand in small crates, while pressing, bottling, corking, labelling and waxing are also completed manually.

About Nicolas Pavie
Nicolas Pavie began the Incipit project near Theizé in 2015, working in the Pierres Dorées hills of southern Beaujolais. His Gamay parcels lie on sand, clay-limestone and the area’s golden stone. The vineyards are worked by hand without motorized equipment, and the grapes are picked into small crates. In the cellar, he works with long infusions and manual handling.
