Trousseau, Poulsard and Pinot Noir are co-fermented. The wine spends two years in large French oak. Alpine bramble, dark cherry and red plum appear with Asian spice, damp earth, dried flowers and game. The profile is tangy, lightly oaked and medium-bodied, with high acidity, medium tannins and low sweetness. The finish is dry. Wild yeast is used.
