About Ninki Inc.
Ninki Inc. makes NINKI-ICHI sake in Nihonmatsu, in Japan’s Fukushima Prefecture. The brewery focuses on ginjo sake, polishing rice to 60 percent or less of its original weight and fermenting slowly at low temperatures. Rice is steamed in traditional kettles, koji is made by hand and wooden tools remain part of the daily process.
Fermentation uses cedar vats of up to 6,500 litres, and the finished sake is stored in bottles. Its sparkling range is fermented in bottle using rice and rice koji.
