Light copper in the glass, with citrus pith, nectarine and peach tart lifted by floral notes and a gentle earthy edge. The palate is lively and textured, its delicate fizz carrying ripe orchard fruit through brisk acidity. A subtle peppery, savoury note adds definition to the clean finish, keeping the fruit bright and refreshingly composed.

About Therianthropy
David Eiberg makes Therianthropy’s wines in Vineland, Ontario, at The Bunker at The Crush. After studying winemaking at UC Davis, he worked in France, California, Oregon, South Africa and Ontario before starting his own project.
He seeks organically farmed grapes from individual Ontario vineyards. In the cellar, he works with native yeasts, little or no added sulphur, and no fining or filtration.
